My first home-made bread!



Tonight ... I'm so glad I did it for the first Once the bread home made! ;-)

The idea in my mind already for a little , and seeing countless versions on your blog I could not wait to try .. but then I said .. I do not have the machine bread, sourdough is still a world to discover for me ... what could possibly go?

In my rescue came the cookbook / calendar Paneangeli , which in November proposes precisely this beautiful braided bread. The procedure is simple, you can mix with their hands and the ingredients are the most common of our pantry.

In questa giornata uggiosa non c'era niente di meglio che rintanarsi in cucina, coccolati dal calduccio del forno per impastare, impastare, impastare... che soddisfazione tenere tra le braccia quella treccia così fragrante e profumata e dentro di dirsi: l'ho fatta io!



TRECCIA DI PANE

ingredienti

un cubetto di lievito di birra da 25 gr

220-250 ml di acqua tiepida

400 gr di farina Manitoba

2 cucchiaini di zucchero e altrettanti di sale

4 cucchiai di olio di oliva


Sciogliete il cubetto di lievito in 50 ml di acqua.
In una terrina capiente setacciate la farina e aggiungetevi il sale e lo zucchero mescolando bene.
Al centro del mucchio praticate una buca, nella quale verserete l'olio e il lievito; amalgamate bene il tutto aggiungendo un alla volta l'acqua rimasta.
Lavorate bene l'impasto per una decina di minuti, dopodichè ponetelo a lievitazione nella terrina infarinata, coperto da un burrazzo umido, per circa un'oretta.
Preriscaldate il forno.

As I promised in my last post I will begin to offer Tyrolean dishes, I got to enjoy it in Last weekend, past the outskirts of Bolzano, precisely to Caldaro , the kingdom of vineyards with its famous wine route.

A typical dish of the area, all of you certainly know, are the dumplings ( Knodel ), ie bread together in various cheese or bacon, then molded in the shape of balls.
I've tasted for the first time nel'agosto 2007, during my first vacation with my boyfriend in Brunico and I fell in love at first bite.

There are two versions, accompanied by a good beef broth or dry, sprayed by the addition of melted butter with a generous dose of grated cheese .
are good ... but both reached the podium in the dry version of the charts as the best comfort food ;-)



CANEDA WITH SPINACH ( Spinatknödel )

ingredients (dose for 8 dumplings )

300 grams of bread stale

100 grams of frozen spinach

2 tablespoons grated cheese 3 eggs



3 tablespoons flour salt and pepper to taste





butter sauce and grated cheese to taste


Cut the crumb of the bread cubes in (I used the mixer to get it more consistent) and let brown in pan with onion.
Separately, in a bowl, make a dough with spinach previously boiled and chopped, eggs, flour, grated cheese and season with salt and pepper then.
Add the fried bread and onions and mix all ingredients well, with this compound formed the dumplings, cooked in boiling water for about 8 minutes.
Serve sprinkled with melted butter and sprinkled with grated cheese.

My Husband Wets The Bed

Ciao a tutti, rieccomi tra voi!! Sono tornata dopo un lunghissimo periodo, fatto soprattutto di studio, che mi ha lasciato pochissimo tempo da dedicare ai fornelli...e non potevo di certo proporvi la pasta in bianco o le verdure scondite che la dieta mi imponeva di mangiare :-(
E poi le vacanze, bellissime, al mare in Salento con una mia amica e in Alto Adige con il mio ragazzo...mi sono annotata tante di quelle ricette che non vedo l'ora di proporvele !

Oggi però cercherò di invogliarvi con questa preparazione , che aspetta il suo turno per essere presentata da tempo immemore, surclassata da ricette sempre nuove che prendono il sopravvento : la focaccia di R ecco .

Era tantissimo tempo che non assaggiavo quella sfoglia sottile, quella fettina ricca di stracchino, talmente fragile che quasi inevitabilmente si rompe al primo morso...che bontà! Così l'altro giorno, approfittando del fatto che il caldo afoso ci sta piano piano abbandonando e alla sera un venticello fresco mi fa compagnia in cucina, ho riacceso il forno, facendolo tornare dalle ferie ;-)

Si tratta di una ricetta molto semplice, sia dal punto di vista della preparazione sia per quanto riguarda gli ingredienti, che si possono contare sulle dita di una mano..e allora cosa sto aspettando? Via!!



FOCACCIA DI RECCO

ingredienti ( per una teglia di 24 cm di diametro)

250 gr di farina

100 ml di acqua frizzante

50 ml d'olio

200 gr di stracchino

una presa di sale


Sul piano di lavoro disponete la farina a fontana, aggiungete il sale, l'olio e l'acqua, impastando fino a formare una palla che dovrà riposare per circa un' oretta in un posto asciutto.
Dividete a metà l'impasto, spianate le parti con il mattarello per ottenere due dischi sottili.
Con il primo rivestite la teglia precedentemente oliata, disponete lo stracchino tagliato a tocchetti e coprite con la seconda sfoglia, arricciano i bordi e facendo dei taglietti con il coltello sulla superficie perché non si creino bolle d'aria durante la cottura.
Spennellate d'olio e infornate per circa 20 minuti a 250 gradi.

...ci sono ricette così veloci e di semplice preparazione che ci permettono sempre di fare bella figura, anche se preparate all'ultimo minuto, magari tra un'ultima spruzzata di profumo e prestando la massima attenzione che non si sbecchi lo smalto appena dato ;)

Quella che vi propongo mi ha "salvata" l'altra sera, quando il mio ragazzo ed io siamo stati invitati ad una cena a casa di amici. L'idea di presentarsi a mani vuote era improponibile, cosicché ho aperto la credenza in cerca di ispirazione. In aiuto mi è venuto del cocco grattugiato , che era in attesa di diventare il protagonista di un delizioso dolcetto: gli ho dato questa soddisfazione, creando delle sfiziose tortine !



TORTINE AL COCCO

ingredienti

300 gr

flour 100ml milk

100 gr grated coconut

100 gr caster sugar



2 eggs 1 / 2 packet of baking powder


In a bowl, pour in the coconut and wet it with milk, letting it rest for about 20 minutes.
shelled eggs in another bowl, add the sugar and beat the ingredients until mixture is light and fluffy. Add the sifted flour, baking powder and the mixture of coconut milk.
Preheat the oven to 180 degrees.
Line a rectangular tin with baking paper and pour in wet and squeezed the mixture, layer with a spatula.
Bake for 30 minutes.
When the cake has cooled divide it into rectangles about 3x6 cm and serve.

... often that comfort me with the food ... no, not because is sad, indeed ... but because I want to cuddle myself, gratified, especially after spending a busy day all'università, vuoi perchè se tra una lezione e l'altra c'è sempre uno stacco di 5 minuti bisogna correre per trovare un posto decente, vuoi perchè ci si stanca di sbocconcellare un panino sulle scale senza avere quasi il tempo di farsi una bella chiacchierata con le amiche...

E così alla domenica sera mi ritrovo a preparare tante squisitezze, che spesso congelo per poi gustarmi durante la settimana: è così bello decidere al mattino cosa regalarsi alla sera e pregustarsi quelle delizie nelle ultime lezioni del pomeriggio, quando la mente non ne può più di sapere cosa succede se il Governo aumenta la spesa pubblica ma ha come pensiero fisso un determinato comfort food!
Today I propose

for filling :

125 grams of boiled spinach

75 gr cubes of mozzarella

75 grams of diced ham


In a large bowl sift the flour and mix in yeast.
Add the potatoes, cottage cheese, sugar, salt, egg and butter and then milk gradually, mix well together and knead the dough for about ten minutes.
Cover the bowl with a damp burrazzo , put it in a warm place for about an hour so that the yeast mixture.
For the filling, mix the spinach in a bowl, formerly with salt and pepper, and diced mozzarella and ham.
With a rolling pin roll out the dough on a floured surface, into a sheet of about 1 cm thick, and cut out discs of approximately 8 cm in diameter.
On each spread in the stuffing and close to of bundle.
When done, place the meatballs on a floured baking sheet, with the welding point down, and let rise again for about 20 minutes in an oven made hot for a few minutes of ignition.
Fry the meatballs in hot oil (180 degrees) for 4 minutes, so they become golden on both sides, and let cool on paper towels.

relaxes me, it's so quick and easy to obtain a beautiful tray ...
And above all that they ought not to take pleasure in a bag at the supermarket, but to go beyond looking at the bench with satisfaction;)

For the gnocchi alla romana ho sempre avuto una predilezione speciale: vederli nelle gastronomie, cosi belli, perfetti e soprattutto con il loro sapore squisito...dovevo assolutamente provare a farli in casa, altrimenti ne avrebbe risentito il mio portafoglio!

La ricetta che vi propongo garantisce un ottimo risultato, e il tocco finale è stato dato da una cascata di burro fuso che con il calore del forno e la spolverizzata di formaggio grattugiato si è trasformato in una deliziosa crosticina.

GNOCCHI ALLA ROMANA

ingredienti

250gr di semolino

1lt di latte

2 egg yolks 100g butter

grated cheese to taste

a pinch of salt


In a saucepan boil the milk with a pinch of salt and 50 grams of butter.
Incorporate the meal, pouring rain, and stir for a couple of minutes until the mixture thickens.
Remove the pan from the heat and add the egg yolks and a couple of tablespoons of grated cheese and mix well.
Place the dough on a pastry board, and when it has cooled cut from the molds circular thickness about half a centimeter.
Preheat the oven to 180 degrees.
Arrange the gnocchi in a pan, sprinkle with the remaining melted butter and a sprinkle of cheese.

Conchiglioni with Taleggio and Gorgonzola cream cake with ricotta and strawberries



... I've always been a huge passion for cheese: I love them all, available in any way and with every possible combination, on top of my personal list is the gorgonzola, which often wondered as a child to my mum before dinner: I remember you I did taste a little baby lying on a square saucer.

The Grana Padano, which I love literally, reminds me of my childhood ... the great-grandmother's house in snack with bread and cheese represented pure joy for me!

And the ball into the dairy world has increased exponentially growing: when I go shopping I get lost in this department, kidnapped by a thousand different varieties that I would use to create many different recipes for all ...

This week, my desire was undecided: Gorgonzola or Taleggio cheese? But both of them, not!

I decided to use it as a filling for a pasta shape that well lends itself to this type of preparation, the conchiglioni .

The final touch was given by a generous amount of sauce and a generous sprinkling of cheese!

Conchiglioni WITH GORGONZOLA CREAM AND TALEGGIO

ingredients ( for a 25cm square baking dish side )

180 grams of conchiglioni

150 gr taleggio

200 gr gorgonzola sauce 250ml



pecorino cheese to taste


Boil conchiglioni in boiling salted water for 10 minutes , drain, pat dry and arrange in the pan.
Meanwhile, melt in water bath Taleggio, with whom he will fill one by one each codpiece.
Preheat the oven to 200 degrees.
In a small saucepan, melt the blue cheese, add the sauce and stir well to mix the two ingredients.
Pour this mixture over the pasta, sprinkle with cheese and bake for about 10 minutes.

Disconnect Telephone Letter





This delicious cake was the final romantic dinner I prepared last night for my boyfriend: after being abroad for a week I wanted to spoil that sweet tooth con qualcosa di dolce! ;)

Quando ho avuto sottomano questa ricetta ho deciso subito che avrei dovuto provarla, vuoi per la genuinità degli ingredienti, vuoi per la semplicità della preparazione e l'abbinamento azzeccato delle fragole con la ricotta.

Ne è uscita una torta dalla consistenza così compatta che il mio ragazzo pensava fosse una sorta di semifreddo e non un prodotto da forno, morbidissima e delicata, con un profumo meraviglioso di fragole.

Ovviamente potete sostituire la fragole con lamponi, mirtilli o quello che la fantasia più vi ispira.

E' ottima spolverizzata con lo zucchero a velo ma anche accompagnata da un topping alla frutta.

TORTA DI RICOTTA E FRAGOLE

ingredienti

500 gr di ricotta

150 gr di zucchero

3 uova

100 gr di farina

250 gr di fragole

zucchero a velo


In una ciotola capiente riunite la ricotta e lo zucchero e amalgamateli fino ad ottenere una crema omogenea.
Aggiungete le uova, la farina setacciata e le fragole precedentemente lavate a tagliate a tocchetti e mescolate delicatamente.
Versate l'impasto in uno stampo rivestito da carta da forno del diametro consigliato di 18 cm - io ne ho usato uno a forma di cuore perchè volevo una torta dalla forma romantica, ma basta che vi ricordiate che , ovviamente, se la volete più alta è meglio utilizzare uno stampo dal diametro più stretto - ed infornate in forno a 160 gradi per circa 45 minuti.
Fatela raffreddare, riponetela su un piatto da portata e spolverizzatela con lo zucchero a velo.

I finished exams! ! Yesterday I gave the last hours and days of total relaxation I expect that I will try to maximize, to rest, relax and groom from the list of recipes that I enticed those who prepare!

I just started this evening for dinner I always try to eat lightly - especially when I had lunch style "New Year's Eve" at the table - but the usual slice to the plate, that I become more than the rags did go with a knob of butter, just I did not ... so ... I have completely transformed: I created the pieces in crust, thanks to the outside so crisp pastry that surrounds them, they contain within itself the ham gives it a touch more flavor.

BITES IN MEAT CRUST

ingredients

300g of beef

6 slices prosciutto 300g of flour


70g of butter at room temperature 1 egg


salt & pepper to taste


For the pastry, sift the flour and a pinch of salt in a bowl. Add the diced butter, an egg and 6 tablespoons of cold water and knead the mixture to blend perfectly all the ingredients form a ball that let it rest for half an hour on a plate covered with a pot just warmed in the oven.
Cut the meat into 12 pieces, let them go in a pan with a little oil a couple of minutes on each side and at the end with salt and pepper.
Divide the dough into 12 equal parts obtained, 2-3 mm thick. Wrap the pieces with
slices of ham cut in half, and arrange the pieces of dough that will close as a kind of bundle sealing the edges goods; Prick the dough with a fork and bake at 180 degrees for about half an hour, or until golden brown .

I'm back, I'm back! Unfortunately I had to leave for ten days because of the study, I argued yesterday the first of three exams that await me this week and I'm happy because it went well! This has encouraged me for the other two, making me more calm and quiet ... and what better to relax a little? Cooking, no! And above all, return to your company .... I miss you so much! The

too hot these days that spring had nothing, here today has given way to a gloomy day and sadly I could not ask for a better turn on the oven, letting yourself be pampered by her warmth and intoxicated by the smell that would have given off ... I decided to finish the dulce de leche , looking at me every time I opened the fridge, in a really tasty: I used it as a filling for the cookies of pastry with hazelnuts .

The pastry recipe I got it from Arietta and I guarantee che è ottima: il risultato è stato la realizzazione di biscotti fragranti, resi gustosi dalle nocciole sminuzzate che si sentivano a ogni morso, e di una scioglievolezza finale incredibile.

BISCOTTI ALLE NOCCIOLE CON DULCE DE LECHE

ingredienti

450gr di farina 0

200gr di zucchero

250gr burro a temperatura ambiente

100gr di nocciole macinate grossolanamente

2 uova

1 pizzico di sale

per la farcitura

dulce de leche

zucchero a velo

In una ciotola setacciate la farina, aggiungete un pizzico di sale, lo zucchero e le nocciole sminuzzate. Incorporate il burro tagliato a dadini e le uova, mescolando poco con un cucchiaio. Lavorate il composto con le mani per poco tempo, giusto per far amalgamare tutti gli ingredienti alla perfezione tra loro.
Date all'impasto la forma di una palla, che avvolgerete con la pellicola trasparente e riporrete in frigorifero per circa un'ora.
Preriscaldate il forno a 180 gradi.
Sulla spianatoia infarinata stendete la pasta di uno spessore circa mezzo centimetro e con gli stampini che preferite create i biscotti .
Adagiarli su una placca da forna rivestita da carta forno e cuoceteli per circa un quarto d'ora .
Let cool, sprinkle with a little dulce de leche and add two and two.

...due ingredienti che si trovano sempre nelle nostre cucine, una preparazione talmente semplice da risultare praticamente un gioco, un unico utensile-un mestolo di legno, un pizzico di pazienza...ed ecco a voi...tadadada...il dulce de leche !

L'altro giorno avevo voglia di qualcosa di godurioso , per coccolare un me stessa in questo periodo fitto di studio, e per farmi passare la malinconia che questi giorni uggiosi avevano portato inevitabilmente...

Allora ho pensato a qualcosa di dolce, che si potesse gustare quietly ... a delicious cream to spread on bread or, better yet, eaten directly with a spoon spoon ... mmm ... how did yours truly!

DULCE DE LECHE

ingredients :

1 liter of whole milk of good quality

300 grams of sugar a pinch of baking



Boil milk with sugar and baking soda, reduce heat, stirring occasionally with a wooden spoon, for about 1 hour and a half.
last half 'now mix more often.
After this period of time, remove the cream from heat, turn it for a few minutes and put it in proper sterilized jars.
